Chicken tagine with olives and preserved lemon, served in its clay dish in Marrakech

Half the reason to come to Marrakech is to eat. Moroccan cuisine is one of the world's great slow-cooked traditions — sweet meets savoury, spice meets fruit. Here's what to order, what it costs, and why a cooking class is the single best food experience in the city.

    The dishes to try

    • Tagine — slow-cooked stew in the conical clay pot; try chicken with preserved lemon and olives, or lamb with prunes and almonds
    • Couscous — traditionally the Friday dish, steamed semolina with vegetables and meat
    • Pastilla (bastilla) — a sweet-savoury pie of pigeon or chicken in crisp warqa pastry, dusted with cinnamon and sugar
    • Harira — tomato, lentil and chickpea soup, especially at sunset in Ramadan
    • Mechoui — slow-roasted lamb, pulled and eaten with cumin and salt
    • Mint tea — "Berber whisky", poured from a height, sweeter than you expect

    Street food on Jemaa el-Fnaa

As the sun sets, the main square becomes an open-air kitchen. Look for grilled skewers and merguez, msemen (flaky griddle bread), freshly squeezed orange juice, and — for the brave — babbouche, the spiced snail soup locals swear by for digestion. Eat where the crowds are Moroccan, not just where a tout is loudest.

    Why take a cooking class

A hands-on Moroccan cooking class is consistently one of the highest-rated experiences travellers book in Marrakech — and for good reason. A typical class starts with a guided walk through the souk to buy spices and vegetables, then you cook a full tagine (and often salads and pastilla) with a dada, a traditional Moroccan home cook, in a riad. You eat what you make, learn the spice blends (ras el hanout, preserved lemon, chermoula), and take the recipes home. It's culture, lunch and a souvenir in one.

    Tips for eating well

    • Busy stalls = fresh turnover; empty ones sit
    • Stick to bottled water and peel your own fruit
    • Vegetarians do well — vegetable tagine and couscous are everywhere
    • Say 'la, shukran' (no, thank you) politely to persistent touts
    • Book cooking classes and popular riad restaurants a day ahead
